1. The "Paris of the South", Aix-en-Provence (or simply Aix), is a chic, cultural city. The popular, lively, tree-lined Cours Mirabeau is Aix's most popular street with numerous sidewalk cafes, beautiful gardens and fountains

2. Discover France's second largest city, Marseille for a change in the scenery you'd usually expect of Provence. This bustling, unique, diverse and culturally rich city has a 2,500-year history. Try bouillabaisse - Marseille is said to have the best in Provence. The recipe for this fish stew typically contains at least three different types of fish (sometimes seven in Marseille). The broth is prepared with onions, tomatoes, saffron and spices and is traditionally served with bread and a side of spicy sauce called rouille.

3. Take a jeep safari through the Camargue Wetlands, located south of Arles in between the Mediterranean Sea and the River Rhone delta. The wildlife is amazing; see the famous wild Camargue horses, Camargue bulls, pink flamingos and over 400 species of migratory birds. This protected region is full of rice fields and produces 75% of the rice grown in France.

4. Head to Nimes where some of the best-preserved remains of the Roman Empire can be observed in and around the city. While you're there climb to the top of the Tour Magne, or Great Tower, and witness Nimes from every angle.

5. Step into the world of van Gogh and rest at an outdoor café in the charming village of Saint Remy de Provence - the town that inspired van Gogh's famous painting, Starry Night. This sleepy town is full of history - it was once the site of a Roman city and is also the birthplace of Nostradamus. Go on Wednesday when a popular market emerges boasting stalls of fresh produce, pottery and other Provencal goods.
